Directions. Pour the milk into a large saucepan and bring to a boil over medium-high heat. Reduce the heat, and slowly pour in the semolina in a steady stream, stirring continuously. Continue to stir and cook until the mixture thickens and boils for 1 to 2 minutes. Remove the pan from the heat and stir in the eggs and rose water. Dissolve the sugar in the water and cook over medium heat until the syrup thickens a bit about 10-12 minutes. Add the lemon juice and orange blossom water and cook for another 3 minutes. This step is optional, I add few leaves of attar of rose geranium, to enhance the flavor a bit more. Cool the syrup and refrigerate. This traditional milk, sugar and semolina pudding is flavoured with rose or orange blossom water and topped with Ashta Cream and toasted chopped pistachios. A real taste of Lebanese cuisine that is easy to prepare and just tastes absolutely amazing.
