The Depaz distillery. Nestled in a green oasis at the foot of the Mount Pelée, the Depaz distillery is one of the smallest production units in Martinique. The Depaz distillery is still operated today, as it always was, with an old vapour machine. At the heart of the distillery, this machine produces the vapour required to activate the mills In 1902, the volcano Mount Pelée erupted and destroyed the surrounding area. In 1917, Victor Depaz founded the Depaz distillery at the base of the volcano. In 1922, he built a château on the grounds. Today, this business grows and processes its sugar cane and ferments, distills, and ages a wide variety of rums. A volcanic terroir. The Depaz distillery owns 450 hectares of sugarcane plantations on the slopes of Montagne Pelée, on the Caribbean side in Saint Pierre and on the Atlantic side in Basse Pointe.As a result, Depaz rum has the typicality and strong identity of a volcanic terroir.
